Stefania super kindly took Luisa, Kat and me down to Cronulla to look for sea urchin as I’m mad about uni in all its forms, but particularly fresh, straight from a live uni from the sea. The last (and only) time I have eaten uni this fresh was when I signed up to a Pennicott boat tour in Hobart in 2019 which took us out near Bruny Island where our guide caught and fed us fresh seafood including uni (a.k.a. DREAM OF MY LIFE).
Stefania also showed us how to use this epic uni tool to open the uni. I have previously bought live uni and opened it in my kitchen sink (the black alien insides slightly confronting and extremely messy for someone who had never seen inside an uni before lol) where I picked out the black parts with unsuitable tweezers. I also practised cleaning uni on the boat in Hobart where you use an old frying pan underneath an uni, a screwdriver of sorts to break in the mouth, rinse out in a bucket of sea water, then use your fingers to gently release the uni gonads from the shell.
Using the uni tool was so sooooo much easier and even in a home kitchen environment, I think would be very helpful. If you don’t have a bucket of seawater near you, use a bucket of salt water to help clean out the uni. I still don’t mind using fingers to clean it but the spatula Stefania had also looked great!

I would recommend only going with someone who knows what they’re doing where you are venturing closer to the water. The waves are unpredictable and given you’ll have your back to the ocean, I wouldn’t suggest going on your own.
